Nevella® Harvest Pumpkin Pie – Servings: 8
Ingredients:
- 1 1/3 c all purpose flour
- 1/4 tsp salt
- 1/2 c lite unsalted butter – chilled and diced
- 1/4 c water – ice cold
- 8 oz low fat cream cheese – softened
- 2 c canned pumpkin
- 1 c Nevella® Granular No Calorie Sweetener
- 1/4 c salt
- 1 egg
- 2 egg yolks
- 1 c lite whipping cream
- 1/4 stick lite unsalted butter, melted
- 1 tsp vanilla
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
Prepare Crust:
- Preheat oven to 350° F
- Combine flour and salt in a large bowl
- Cut in ½ c butter until it resembles coarse crumbs
- Stir in water, a tablespoon at a time, until mixture forms a ball
- Wrap in plastic film and refrigerate 4 hours or overnight
- Roll dough out to fit a 9-inch pie plate
- Place dough in a pie plate and press evenly into the bottom and sides of the pie plate
- Pinch and crimp the edges to make a pattern
Prepare Filling:
- Beat cream cheese in a large mixing bowl with a hand mixer
- Add the pumpkin and beat until combined
- Add Nevella® no calorie sweetener and salt, beat until combined
- Add the egg mixed with the yolks, whipping cream and melted butter, beat until combined
- Add the vanilla, cinnamon and ginger, mix until incorporated
- Pour the filling into the pie crust and bake for 50 minutes, or until the center is set
- Place the pie on a wire rack and cool to room temperature before serving
